Basque Burnt Cheesecake

Basque burnt cheesecake is cheesecake cooked under very high heat with soft and creamy. center and burnt top.

Ingredients:
  • 500g Cream cheese
  • 250ml Whipping cream
  • 150g Castor sugar
  • 5 Eggs
  • 1 Tablespoon lemon juice
  • 20g Flour
  • Butter
1. Crack the eggs into a bowl.
2. Spread some butter around the pan and layer a piece of baking paper over it. Make sure the paper is taller than the pan.
3. Preheat the oven.
4. In a bowl, mix the cream cheese until it is soft.
5. Add in castor sugar and mix until it is smooth.
6. Add in the eggs one by one as you continue mixing.
7. Add the lemon juice into the barter. Mix it.
8. Sieve the flour into the barter and mix it while slowly adding the whipping cream in.
9. Pour the barter into the pan layered with baking paper.
10. Bake it, top and bottom for 30mins and then the top for 10mins or until it is burnt.
11. Remove from oven and let it cool down before chilling it in the refrigerator.
